Jose Enrique Alejos, a spirited and courageous man known for his thoughtfulness and passion for life, passed away on February 8, 2025, at the age of 85 in Edinburg, Texas. Born on September 18, 1939, Jose's journey through life was marked by his devotion to his family, his love for boxing, and the joy he found in his restaurant, which became a cornerstone of his legacy.

Preceded in death by his parents, Juan Alejo and Antonia Rodriguez, and his beloved son Javier Alejos, Jose's memory is cherished and kept alive by his adoring family. He is survived by his children, Joseph Alex Alejos and his wife Jazmine, Enrique Alejos, and Maria Belen Sidders. His brothers and sisters, Manuel Alejos, Guadalupe Torres, Gerardo Alejos, Petra Lopez, Vicente Villanueva, and Maria de Jesus Alejo, also remember him fondly. Jose's grandchildren, Mia A Alejos, Aliia A Alejos, Joseph A Alejos Jr "El Campion", Javier Alejos Jr, Michael lee Alejos, Ruby Garcia, Alex Garcia, Valerie Gallardo, and Christopher Lee Sidders, and Frank Rene, will forever hold dear the memories of their grandfather's love and the lessons he imparted.

Jose's zest for life was evident in his everyday activities. He was a man who found great pleasure in the simple things, like watching the films of Pedro Infante and other classic movies. Known for predicting the plot twists with a chuckle, he would gather his family around the screen, sharing his anticipation of the unfolding scenes. His insights and the shared laughter became a beloved part of family gatherings.

A true patriarch, Jose reveled in the playful antics of his grandchildren. He was particularly fond of watching them play and spar, always cheering for his "campion." His presence at family events was a source of joy and comfort, as he would engage in lively conversations and share stories that spanned generations.

Jose's restaurant was more than a business to him; it was a manifestation of his dreams and a second home where he welcomed customers as if they were family. With his hands-on approach, he was a familiar and welcoming figure, often found conversing with patrons or overseeing the kitchen's bustling activity. His dedication to the restaurant was unwavering, and it became a beloved institution in Edinburg, known for its delicious chicken and the warm atmosphere that Jose cultivated. Mr. Alejos was also a coach for the Boys and Girls Club in Edinburg during the 1970s. He was an avid boxing promoter for Jaime Rocky Balboa.

His restaurant, Hamburger King Restaurant, that has been apart of Edinburg for more than 50 years, was not just a place to dine but a gathering spot where memories were made, and community ties were strengthened. It will continue to serve the people of Edinburg in Jose's honor, a testament to his hard work and the love he poured into every dish.

Jose Enrique Alejos will be remembered as a man of great character, whose life was characterized by the values he held dear. His thoughtful nature made him a confidant to many, his courage inspired those around him, and his spirited demeanor brought light into every room he entered. The legacy of Jose Enrique Alejos will live on through the lives he touched, the family he cherished, and the community he helped build. His story is not one of an ending, but a lasting influence that will be felt for generations to come.

 

Family and friends will gather for a visitation on Sunday, February 17, 2025, from 5 p.m. to 9 p.m. with a rosary at 7 p.m. at Rivera at Hillcrest Funeral and Cremations in Edinburg, Texas. 1300 N. I-69C, Edinburg, Texas 78542. The funeral mass will be at 10 a.m. on Tuesday, February 18, 2025, at Sacred Heart Catholic Church in Edinburg. Interment will follow at Hillcrest Memorial Park in Edinburg.
